Thai Coconut Rice

Coconut Rice is usually served with green papaya salad or a red chicken curry.

  • 2 cups uncooked jasmine rice
  • 2 cups coconut cream
  • 1 cup water
  • 1⁄2 tsp. salt
  • 1 Tbsp. granulated sugar
  • 2 pandan leaves, folded


  • Soak rice in enough water to cover by 3 inches for 1 hour. Drain.
  • In a heavy, medium saucepan, mix coconut cream, water, salt, sugar, and pandan leaves, and stir to dissolve salt and sugar.
  • Add rice to the pot, stir, and bring to a boil, stirring occasionally. When the rice comes to a boil, turn the heat down to a very low simmer. Cover and let cook for 15 minutes. When done, remove from heat, remove pandan leaves (if desired), and let rest for 5 to 10 minutes before serving.
