Thai Coconut Rice
Coconut Rice is usually served with green papaya salad or a red chicken curry.

- 2 cups uncooked jasmine rice
- 2 cups coconut cream
- 1 cup water
- ½ tsp. salt
- 1 Tbsp. granulated sugar
- 2 pandan leaves, folded
- Soak rice in enough water to cover by 3" for 1 hour. Drain.
- In a heavy, medium saucepan, mix coconut cream, water, salt, sugar, and pandan leaves, and stir to dissolve salt and sugar.
- Add rice to the pot, stir, and bring to a boil, stirring occasionally. When the rice comes to a boil, turn the heat down to a very low simmer. Cover and let cook for 15 minutes. When done, remove from heat, remove pandan leaves (if desired), and let rest for 5–10 minutes before serving.
