Thai Cucumber Salad
This easy dish is great as a side for a variety of meals, especially dishes that contain dried spices like yellow curry or satay.

- 1⁄3 cup white vinegar
- 1⁄3 cup sugar
- 1⁄2 cup water
- 1 tsp. salt
- 3 pickling cucumbers
- 1 red serrano pepper, thinly-sliced crosswise
- 1 thinly sliced shallot
- 1 tsp. minced ginger
- 1⁄4 cup chopped cilantro
- In a medium saucepan, bring white vinegar, sugar, water, and salt to a boil to dissolve the sugar. Turn off heat and let cool.
- Quarter the cucumber lengthwise and slice it thinly. In a mixing bowl, combine cucumbers, serrano, shallot, ginger, and cilantro and toss with dressing. Let salad rest for 20 minutes.
