Thai Cucumber Salad

This easy dish is great as a side for several meals, especially dishes that contain dried spices like yellow curry or satay.

  • ⅓ cup white vinegar
  • ⅓ cup sugar
  • ½ cup water
  • 1 tsp. salt
  • 3 pickling cucumbers
  • 1 whole Serrano pepper
  • 1 thinly sliced shallot
  • 1 tsp. minced ginger
  • ¼ cup chopped cilantro


  • In a medium saucepan, bring white vinegar, sugar, water, and salt to a boil to dissolve the sugar. Turn off heat and let cool.
  • Quarter the cucumber lengthwise and slice it thinly. In a mixing bowl, combine all the ingredients and toss well with dressing. Let the salad rest for 20 minutes.
