Thai Garlic Shrimp

This is a very versatile recipe because you can use different kinds of seafood to make it.

Ingredients

  • ¼ cup vegetable oil
  • 2 Tbsp. sliced garlic
  • 1 Tbsp. minced cilantro stems
  • 1 tsp. ground white pepper
  • 2 tsp. fish sauce
  • 1 tsp. sugar
  • 1½ lbs. large shrimp, peeled and deveined
  • 1 Tbsp. minced ginger
  • ¼ cup thinly sliced scallions

Directions

  • Heat oil in a large skillet over medium-high heat. Fry garlic, cilantro stems, and pepper until fragrant and light brown, about 1 minute. Add fish sauce and sugar and mix well.
  • Add shrimp and sauté until shrimp is almost done, about 1–2 minutes. Add ginger and green onion. Stir to combine. Serve hot.
