Thai Peanut Sweet Potato Bowl
Peanut sauce is available in the Asian section of most grocery stores. Or, make your own by whisking together 2 tablespoons coconut aminos or soy sauce, 1 tablespoon Sriracha, 1 tablespoon creamy peanut butter, and a pinch of fresh grated ginger.

- 1 Tbsp. coconut oil
- 1 clove garlic, minced
- 2 cups sweet potato noodles
- ¼ cup prepared ginger-peanut sauce
- 1 cup baby spinach
- ¼ cup fresh basil leaves
- ¼ cup chopped peanuts
- In a large skillet, heat coconut oil over medium heat. Add garlic and noodles, cooking until tender and slightly charred. Stir in peanut sauce.
- Remove from heat, toss in spinach and basil. Allow to wilt slightly before serving. Garnish with chopped peanuts.
