Thai Peanut Sweet Potato Bowl

Peanut sauce is available in the Asian section of most grocery stores. Or, make your own by whisking together 2 tablespoons coconut aminos or soy sauce, 1 tablespoon Sriracha, 1 tablespoon creamy peanut butter, and a pinch of fresh grated ginger.

  • 1 Tbsp. coconut oil
  • 1 clove garlic, minced
  • 2 cups sweet potato noodles
  • ¼ cup prepared ginger-peanut sauce
  • 1 cup baby spinach
  • ¼ cup fresh basil leaves
  • ¼ cup chopped peanuts


  • In a large skillet, heat coconut oil over medium heat. Add garlic and noodles, cooking until tender and slightly charred. Stir in peanut sauce.
  • Remove from heat, toss in spinach and basil. Allow to wilt slightly before serving. Garnish with chopped peanuts.
