Toasted Coconut Rice
Coconut Rice makes a tasty snack or an exciting and exotic change from plain steamed rice. It is lightly sweet with a bold coconut flavor.

Ingredients
- 2 cups uncooked jasmine rice
- 2 cups coconut cream
- 1 cup water
- ½ tsp. salt
- 1 Tbsp. white sugar
- ¼ cup toasted coconut
Directions
- Soak rice in enough water to cover well for 1 hour. Drain.
- In a heavy, medium saucepan, mix coconut cream, water, salt, and sugar. Stir to dissolve salt and sugar.
- Add rice to the pot, stir, and bring to a boil, stirring occasionally. When rice comes to a boil, turn heat down to a very low simmer. Cover and let cook for 15 minutes. When done, remove from heat, and let rest for 5–10 minutes before serving. Sprinkle with toasted coconut.
