Tofu Mayonnaise
This faux mayonnaise recipe gives you a very light alternative to store-bought mayo. A touch of Dijon adds a rich and enjoyable flavor twist.

Ingredients
- 15 oz. soft tofu
- 6 Tbsp. plain yogurt
- 3 Tbsp. cider vinegar
- 2 tsp. Dijon mustard
- 1 garlic clove
- 1 tsp. sugar
- ½ tsp. salt
- 2 Tbsp. olive oil
Directions
- Combine all ingredients except oil in a food processor and blend until smooth. Slowly drizzle oil through feed tube until mixture becomes creamy. Mixture will thicken when chilled. Refrigerate in covered container.
