Tofu Sour Cream

This delicious spread not only provides a vegan alternative to fat-rich sour cream, but also provides essential protein for vegetarians. It is important to include soy foods as a daily part of a vegetarian diet.

  • 1½ cups firm silken tofu, broken up
  • 1 Tbsp. extra-virgin olive oil
  • 1 Tbsp. vegetable oil
  • 2 tsp. fresh lemon juice
  • 2 tsp. apple cider vinegar
  • ½ tsp. sugar
  • ½ tsp. salt


  • Combine all ingredients in a blender or food processor. Process or blend until smooth. Chill. Keeps for up to 10 days.
