Tofu Sour Cream

Makes: 1½ cups
- 1½ cups firm silken tofu, broken up
- 1 Tbsp. extra-virgin olive oil
- 1 Tbsp. vegetable oil
- 2 tsp. fresh lemon juice
- 2 tsp. apple cider vinegar
- ½ tsp. sugar
- ½ tsp. salt
- Combine all ingredients in a blender or food processor. Process or blend until smooth. Chill. Keeps for up to 10 days.
