Tofu Taco-dilla
These plant-based taco-dillas are made with seasoned tofu and served with mashed avocado for a tasty, kid-friendly lunch option.

Ingredients
- 2 tbsp. avocado oil
- 14 oz. Simple Truth Organic™ Extra Firm Tofu, drained
- 2 tbsp. taco seasoning
- 1⁄2 cup water
- 16 oz. vegetarian refried beans
- 6 soft taco-sized flour tortillas
- 6 (2 oz. each) Simple Truth™ Mashed Avocado Single Serve On-The-Go Packs
Directions
- Heat oil in a large skillet over medium-high heat. Crumble tofu into the pan. Cook for 8-10 minutes or until tofu is browned.
- Add taco seasoning and water. Reduce heat to medium-low; cook 3-5 minutes or until sauce has thickened and reduced.
- To make taco-dillas, divide refried beans and crumbled tofu between 6 flour tortillas. Fold each tortilla in half to enclose fillings.
- Wipe skillet clean and heat over medium. Toast taco-dillas for 4-6 minutes, flipping once, until golden brown on both sides.
- Serve taco-dillas warm or cold with mashed avocado.
- Refrigerate leftovers.
