Tomato-Basil Pasta

  • ¼ cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 2½ cups diced tomatoes
  • ⅓ cup chopped fresh basil
  • ¼ tsp. salt
  • ⅛ tsp. ground black pepper
  • ¾ cup chicken stock
  • ¾ lb. fettuccine, cooked
  • ¼ cup grated Parmesan cheese


  • In a large, deep skillet, heat the oil over medium heat. Add the garlic and sauté until soft. Add the tomatoes and basil and season with salt and pepper. Sauté for about 5 minutes. Add the chicken stock and bring to a simmer.
  • Combine pasta and cheese with the sauce in the skillet. Stir to combine well.
