Tomato and Jalapeño Salsa
This is chunky and crunchy salsa, not cooked or puréed. Remember to wash your hands after chopping the jalapeño so that you don’t accidentally transfer hot pepper juice residue to your eye!

- 2 cups seeded and diced tomatoes
- 1 cup diced onion
- 1 small jalapeño pepper, seeded and minced
- 1 clove garlic, peeled and minced
- ¼ cup chopped cilantro
- 1 Tbsp. lemon juice
- 1 tsp. red wine vinegar
- 1 Tbsp. olive oil
- ½ tsp. ground cumin
- ½ tsp. salt
- Toss all ingredients together in a bowl and chill for 1 hour.
