Tomato Vegetable Soup

This recipe calls for canned tomatoes, but if your garden is overflowing with ripe tomatoes, consider using fresh peeled tomatoes instead.

Ingredients

  • 1 Tbsp. olive oil
  • 2 tsp. minced garlic
  • ⅔ tsp. ground cumin
  • 2 medium carrots, peeled and chopped
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • ⅔ cup tomato paste
  • ½ tsp. red pepper flakes
  • 2 cups canned peeled tomatoes, with juice
  • ⅔ tsp. chopped fresh oregano
  • 3 cups chicken stock
  • 3 cups beef stock
  • 2 cups diced potatoes
  • 2 cups shredded cabbage
  • ½ cup green beans
  • ½ cup corn kernels
  • ½ tsp. ground black pepper
  • ¼ cup lime juice

Directions

  • Heat olive oil in a large stockpot; sauté garlic, cumin, carrot, and celery for 1 minute. Add onion; cook until transparent. Stir in tomato paste; sauté until it begins to brown.
  • Add remaining ingredients except for lime juice or vinegar. Bring to a boil; reduce heat and simmer for 30 minutes, adding additional stock or water if needed.
  • Just before serving, add lime juice.
