Ingredients
- 3⁄4 cup coconut oil, melted and slightly cooled
- 3⁄4 cup coconut sugar
- 1 large egg
- 1⁄2 tsp. vanilla
- 1 1⁄2 cups unsweetened coconut flakes
- 1 cup all-purpose flour
- 1⁄4 tsp. baking soda
- 1⁄4 tsp. baking powder
- 1⁄4 tsp. salt
Directions
- Heat oven to 350°F. Line 2 baking sheets with parchment paper; set aside.
- In a mixing bowl, whisk together coconut oil and coconut sugar. Add egg and vanilla; whisk thoroughly.
- Add coconut, flour, baking soda, baking powder and salt. Stir until well combined.
- Place 1½” dough balls on prepared sheets about 2” apart.
- Bake for 9-11 minutes or until lightly browned on the edges. Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Store in an airtight container at room temperature.
