Tropical Breakfast Couscous
This recipe is like having a piña colada for breakfast. What could be better? Top it with some fresh fruit, stick a flower behind your ear, and enjoy this breakfast barefoot in the sun.

- 1 cup coconut milk
- 1 cup pineapple juice
- 1 cup couscous
- ½ tsp. vanilla extract
- 2 Tbsp. maple syrup
- In a small saucepan, heat coconut milk and juice until just about to simmer. Do not boil.
- Add couscous and heat for 1 minute. Stir in vanilla, cover, and turn off heat. Allow to sit, covered, for 5 minutes, until couscous is cooked.
- Fluff couscous with a fork and stir in maple syrup.
