Tropical Marinade

The acid from the pineapple juice and this aromatic blend of spices make this a delicious marinade for poultry.

Ingredients

  • ⅔ cup pineapple juice
  • ⅓ cup vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp. ground cumin
  • ¼ tsp. ground ginger
  • ⅛ tsp. ground nutmeg
  • ⅛ tsp. ground allspice
  • ⅛ tsp. ground black pepper

Directions

  • Combine all the ingredients in a glass bowl and mix well. Reserve about ½ cup of the unused marinade and simmer for about 4 minutes to use as a glaze just before serving.
