Tropical Soy Nog
Be sure to peel your papaya before you cut it into chunks and throw it in the blender—the skin isnʼt edible!

- ¾ cup soy milk
- 1½ cups frozen chopped papaya
- 1½ tsp. fresh lemon zest
- 1 tsp. vanilla extract
- Pour soy milk into blender. Add peeled papaya, lemon zest, and vanilla. Blend on high speed until smooth and serve immediately.
