Turkey Chorizo Huevos Rancheros

Ingredients
- 1 packet Simple Truth Organic Chorizo Spice Blend packet
- 1 tbsp. Vegetable Oil
- 1 pound lean ground turkey
- 1 can black beans
- 1 cup Fresh Salsa
- 2 ripe avocados, sliced
- 1⁄2 cup queso fresco, crumbled
- 4 large eggs
- 4 Soft Taco Tortillas
- Optional Garnishes:
- cilantro, salsa, sour cream
Directions
- In a medium saucepan, combine black beans (undrained) and the salsa. Warm over medium heat, stirring occasionally. Taste for seasoning.
- In a large skillet, warm oil over medium high heat. Add turkey and use a spatula to crumble the meat as it cooks. Once browned through, add the spice blend and ¼ cup. water. Mix well and cook for another 2-3 minutes. Pour out onto a plate and wipe out the skillet.
- One at a time, add the tortillas and let them puff up for 3-5 seconds then flip and repeat. Repeat with the remaining tortillas.
- Using the same skillet, cook the eggs according to personal preference. We love sunny side up eggs for this recipe, but scrambled eggs are good too!
- To serve, place a tortilla on each plate, top with black bean salsa mixture, chorizo, eggs, avocado and cheese.
