Turkey and Herb Meatballs with Fresh Tomato Sauce

  • 1 lb. ground turkey
  • 1 large egg, beaten
  • 1⁄4 cup chopped basil, divided
  • 2 Tbsp. chopped oregano, divided
  • 2 Tbsp. chopped flat-leaf parsley
  • 1 1⁄2 tsp. kosher salt, divided
  • 1⁄2 tsp. freshly ground black pepper
  • 1 1⁄2 cups cherry tomatoes
  • 1 clove garlic, chopped
  • 1 medium shallot, chopped


  • Preheat oven to 400°F.
  • Mix the turkey, egg, 2 tablespoons basil, 1 tablespoon oregano, parsley, 1 teaspoon salt, and pepper together in a large bowl.
  • Divide mixture into 8 meatballs. Bake on a large, rimmed sheet pan for 30 minutes, or until they register 160°F with a meat thermometer.
  • Combine the tomatoes, garlic, shallot, and the remaining salt, basil, and oregano in a food processor fitted with a metal blade. Process until smooth. Pour the mixture into a small saucepan, and bring to a simmer over medium heat. Serve the meatballs with the sauce.
