Turkey Meatball and Rice Soup

Made with precooked rice and meatballs, this veggie-loaded comfort soup is just a quick simmer away.

Ingredients
- 1 tablespoon olive oil
- 3 carrots, cut into coins
- 3 stalks celery, sliced
- 1 onion, diced
- 6 cups low-sodium chicken stock
- 1 package (8.8 oz.) precooked rice
- 1 package (12 oz.) Turkey Meatballs, cooked according to package
- 4 cups loosely packed baby spinach
- Salt
- Ground pepper
- Finely grated parmesan cheese, optional
Directions
- In large, heavy-bottomed stockpot or Dutch oven over medium-high heat, warm oil. When oil shimmers, add carrots, celery and onion; cook, stirring frequently, until slightly softened, 5 minutes.
- Add stock; bring to boil. Reduce heat and simmer 10 minutes.
- Add rice, meatballs and spinach. Continue to simmer 5 minutes or until meatballs reach a safe internal temperature of 165°F.
- Season to taste with salt and pepper. Serve with parmesan, if desired. Refrigerate any leftovers.
