Turkey Meatball and Rice Soup

Ingredients

  • 1 tablespoon olive oil
  • 3 carrots, cut into coins
  • 3 stalks celery, sliced
  • 1 onion, diced
  • 6 cups low-sodium chicken stock
  • 1 package (8.8 oz.) precooked rice
  • 1 package (12 oz.) Turkey Meatballs, cooked according to package
  • 4 cups loosely packed baby spinach
  • Salt
  • Ground pepper
  • Finely grated parmesan cheese, optional

Directions

  • In large, heavy-bottomed stockpot or Dutch oven over medium-high heat, warm oil. When oil shimmers, add carrots, celery and onion; cook, stirring frequently, until slightly softened, 5 minutes.
  • Add stock; bring to boil. Reduce heat and simmer 10 minutes.
  • Add rice, meatballs and spinach. Continue to simmer 5 minutes or until meatballs reach a safe internal temperature of 165°F.
  • Season to taste with salt and pepper. Serve with parmesan, if desired. Refrigerate any leftovers.
