Turkey Meatballs

This is a fairly generic meatball recipe with some basic additions. You can substitute any type of ground meat you prefer: bison, beef, chicken, or pork. Flaxseed meal can replace the almond meal as well.

Ingredients

  • 2 lbs. ground turkey (93 percent lean)
  • 1 cup almond meal
  • 2 large eggs
  • 5 scallions, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 Tbsp. dried basil
  • 1 Tbsp. dried oregano
  • 2 Tbsp. olive oil

Directions

  • Preheat oven to 400°F.
  • Combine all ingredients in a large bowl. Mix well with clean hands. Form turkey mixture into 24 meatballs and place on 2 rimmed baking pans.
  • Bake for 20 minutes.
