Turkey Meatballs with Tangy Apricot Sauce

Ingredients
- 1 lb. ground turkey
- 3⁄4 cup almond flour
- 1 large egg
- 1⁄4 cup finely diced onions
- 1⁄4 cup finely diced celery
- 2 cloves garlic, minced
- 1⁄2 tsp. ground pepper
- 1 Tbsp. olive oil
- 1 cup apricot preserves
- 1⁄4 cup Dijon mustard
Directions
- In a large bowl mix together the ground turkey, almond flour, egg, onions, celery, and ground pepper. Roll into small meatballs (about 16 to 20). The meatball mixture will be slightly wet.
- Heat olive oil in a large skillet. Add meatballs to hot skillet and brown on all sides, about 1 minute per side.
- Grease a 2 1⁄2-quart slow cooker. Add browned meatballs to the slow cooker.
- In a small bowl mix together the preserves and mustard. Pour the sauce over the meatballs. Cook on low for 6 hours.
