Tuscan Bean Soup

Ingredients

  • 4 cups chicken broth
  • 3 cups canned white beans, drained and rinsed
  • 2 cups diced tomatoes
  • 1 cup red wine
  • 1 cup baby spinach
  • ½ cup diced bell peppers
  • ½ cup sliced celery
  • ½ cup sliced carrots
  • 1 Tbsp. tomato paste
  • 1 clove garlic, peeled and minced
  • 1 tsp. dried oregano
  • 1 tsp. all-purpose seasoning
  • 1 tsp. ground cumin
  • ½ tsp. ground black pepper

Directions

  • Combine all ingredients in a large saucepan. Cook on medium-high heat for 15 minutes.
  • Reduce heat to low, simmer for another 10 minutes, then serve.
