Vegan Alfredo

Top cooked fettuccine with this updated version of a classic sauce.

Ingredients

  • 1 cup raw cashews
  • 1 cup water
  • ½ cup unsweetened soymilk
  • 3 cups vegetable broth
  • Juice of ½ lemon
  • ½ cup nutritional yeast
  • 1 tsp. mustard
  • 2 cloves garlic, minced
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. nutmeg
  • 1 tsp. parsley leaves

Directions

  • In a blender, place the cashews, water, and soymilk. Process until very smooth.
  • In a 4-quart slow cooker, pour the blended cashew sauce and all remaining ingredients and stir well. Cover and cook over low heat for 1 hour. Garnish with nutmeg and parsley before serving.
