Vegan Alfredo
Top cooked fettuccine with this updated version of a classic sauce.

Ingredients
- 1 cup raw cashews
- 1 cup water
- 1⁄2 cup unsweetened soy milk
- 3 cups vegetable broth
- Juice of 1⁄2 lemon
- 1⁄2 cup nutritional yeast
- 1 tsp. mustard
- 2 cloves garlic, minced
- 2 tsp. salt
- 1 tsp. pepper
- 1 tsp. nutmeg
- 1 tsp. parsley leaves
Directions
- In a blender, place the cashews, water, and soy milk. Process until very smooth.
- In a 4-quart slow cooker, pour the blended cashew sauce and all remaining ingredients and stir well. Cover and cook over low heat for 1 hour. Garnish with nutmeg and parsley before serving.
