Vegan Alfredo Sauce

This vegan version of the classic Alfredo sauce is easy to make in a slow cooker. Serve with cooked pasta or as a topping for baked potatoes.

Ingredients

  • 1 cup raw cashews
  • 1 cup water
  • ½ cup unsweetened soymilk
  • 3 cups vegetable broth
  • Juice of ½ lemon
  • ½ cup nutritional yeast
  • 1 tsp. mustard
  • 2 cloves garlic, minced
  • 2 tsp. salt

Directions

  • In a 4-quart slow cooker, add all ingredients and stir well. Cover and cook over low heat for 1 hour.
  • Using an immersion blender, purée the sauce.
