Vegan Apple Cinnamon Waffles
For perfect vegan waffles, make sure your waffle iron is hot and very well greased, as vegan waffles tend to be stickier than regular waffles.

- 1 1⁄4 cups all-purpose flour
- 2 tsp. baking powder
- 1⁄2 tsp. ground cinnamon
- 2 tsp. sugar
- 1 cup soy milk
- 1⁄2 cup applesauce
- 1 Tbsp. vegetable oil
- In a large bowl, combine the flour, baking powder, cinnamon, and sugar.
- In a separate bowl, combine soy milk, applesauce, vanilla, and oil. Add the soy milk mixture to the dry ingredients, stirring just until combined; do not over mix.
- Carefully drop about 1⁄4 cup batter onto preheated waffle iron for each waffle, and cook until done.
