Vegan Apricot Banana Smoothie
This sweet and satisfying smoothie is perfect for breakfast or an after-school snack.

- 2 cups coconut milk
- 4 medium apricots, peeled and pitted
- 2 medium bananas, peeled
- 2 Tbsp. maple syrup
- 6 ice cubes
- 2 Tbsp. apricot jam
- Combine coconut milk, apricots, banana, maple syrup, and ice in blender and blend until smooth and frosty.
- Place jam in a small bowl and microwave on high for 30 seconds. Drizzle smoothies with melted apricot jam before serving.
