Vegan Apricot Banana Smoothie

This sweet and satisfying smoothie is perfect for breakfast or an after-school snack.

  • 2 cups coconut milk
  • 4 medium apricots, peeled and pitted
  • 2 medium bananas, peeled
  • 2 Tbsp. maple syrup
  • 6 ice cubes
  • 2 Tbsp. apricot jam


  • Combine coconut milk, apricots, banana, maple syrup, and ice in blender and blend until smooth and frosty.
  • Place jam in a small bowl and microwave on high for 30 seconds. Drizzle smoothies with melted apricot jam before serving.
