Vegan Chocolate Chip Cookies

These cookies are just like the ones mom used to make, only with a bit of applesauce to cut down on the fat a bit.

Ingredients

  • 2⁄3 cup vegan margarine
  • 2⁄3 cup granulated sugar
  • 2⁄3 cup brown sugar
  • 1⁄3 cup applesauce
  • 1 1⁄2 tsp. vanilla extract
  • Egg replacer for 2 eggs
  • 2 1⁄2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1⁄2 tsp. baking powder
  • 1 tsp. salt
  • 2⁄3 cup quick-cooking oats
  • 1 1⁄2 cups vegan chocolate chips

Directions

  • Preheat oven to 375°.
  • In a large mixing bowl, cream together the vegan margarine and granulated sugar, then mix in brown sugar, applesauce, vanilla, and egg replacer.
  • In a separate bowl, combine the flour, baking soda, baking powder, and salt, then combine with the wet ingredients. Mix well. Stir in oats and chocolate chips just until combined.
  • Drop by generous spoonfuls onto 2 large baking sheets and bake for 10 to 12 minutes.
