Vegan Chocolate Ganache
This is a silky-smooth chocolate icing, perfect for cakes and pastries. Substitute plain or vanilla soymilk when soy creamer is not available.

Makes: 2½ cups
- ¾ cup soy creamer
- 4 Tbsp. vegan margarine
- 12 oz. vegan chocolate chips
- Place soy creamer and margarine in a bowl over a pan of gently simmering water and heat until the margarine melts.
- Add the vegan chocolate chips and continue to heat, stirring constantly until the mixture is smooth.
- Store in the refrigerator in an airtight container. Reheat in a bowl over warm water as needed.
