Vegan Coconut Rice Pudding
The combination of tropical coconut milk and cinnamon is simply heavenly. You can also add mangos, pineapples or strawberries for a delicious touch to this refined sugar-free dessert.

- 1½ cups cooked white rice
- 1½ cups vanilla soy milk
- 1½ cups coconut milk
- 3 Tbsp. brown rice syrup
- 2 Tbsp. agave nectar
- ½ tsp. ground cinnamon
- Combine rice, soy milk, and coconut milk over low heat. Bring to a very low simmer for 10 minutes, or until mixture starts to thicken.
- Stir in brown rice syrup, agave nectar, and cinnamon, and heat for another 2–3 minutes.
- Allow to cool slightly before serving to allow pudding to thicken.
