Vegan Irish Soda Bread
This is a traditional recipe that replaces buttermilk with the vegan alternative: soymilk and lemon juice! Enjoy this bread hot with a slather of vegan margarine.
Serves: 12Hands-on: 10 minutesTotal: 1 hour 10 minutesDifficulty: Easy
- 1¾ cups soymilk
- 5 tsp. lemon juice
- 4 cups, plus 2 Tbsp. all-purpose flour, divided
- 1 tsp. baking soda
- 1 tsp. salt
- Preheat oven to 425°F.
- In a small bowl stir together soymilk and lemon juice and allow to sit for 10 minutes. Whisk flour, baking soda, and salt together in a large bowl. Gradually stir in soymilk mixture, beating just until the dough forms a ball. Place dough on a lightly floured surface and shape into a flat, 8" round loaf. Dust the top of the loaf with the remaining 2 tablespoons of flour.
- Place loaf on a lightly greased baking sheet and bake 45–50 minutes, or until golden brown.
