Vegan Mushroom Gravy
Stir, stir, stir! Just like regular gravy, the secret to perfect vegan gravy is in the stirring, to prevent those pesky lumps. That and the hefty added flavors!

Ingredients
- ¼ cup vegan margarine
- ¾ cup sliced mushrooms
- 2½ cups vegetable broth
- 1 tsp. garlic powder
- 1 tsp. onion powder
- ½ tsp. dried sage
- ½ tsp. dried thyme
- ¼ tsp. dried marjoram
- 3 Tbsp. all-purpose flour
- 2 Tbsp. nutritional yeast
- ¼ tsp. salt
- ¼ tsp. ground black pepper
Directions
- Heat the vegan margarine in a large skillet over medium heat and add mushrooms. Sauté for 2–3 minutes.
- Reduce heat to medium low and add vegetable broth, garlic powder, onion powder, sage, thyme, and marjoram, stirring well to combine.
- Add flour, 1 tablespoon at a time, whisking constantly to combine well and prevent lumps. Allow to cook for 2–3 minutes before adding the next tablespoon of flour. Continue simmering over low heat until thick.
- Remove from heat and stir in nutritional yeast, salt, and pepper. Gravy will thicken as it cools.
