Serves: 6

  • 1⁄4 cup vegan margarine
  • 3⁄4 cup sliced mushrooms
  • 2 1⁄2 cups vegetable broth
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1⁄2 tsp. dried sage
  • 1⁄2 tsp. dried thyme
  • 1⁄4 tsp. dried marjoram
  • 3 Tbsp. all-purpose flour
  • 2 Tbsp. nutritional yeast
  • 1⁄4 tsp. salt
  • 1⁄4 tsp. ground black pepper

  • Heat the vegan margarine in a large skillet over medium heat and add mushrooms. Sauté for 2 to 3 minutes.
  • Reduce heat to medium low and add vegetable broth, garlic powder, onion powder, sage, thyme, and marjoram, stirring well to combine.
  • Add flour, 1 tablespoon at a time, whisking constantly to combine well and prevent lumps. Allow to cook for 2 to 3 minutes before adding the next tablespoon of flour. Continue simmering over low heat until thick.
  • Remove from heat and stir in nutritional yeast, salt, and pepper. Gravy will thicken as it cools.
