Serves: 6Hands-on: 10 minutesTotal: 25 minutesDifficulty: Easy
- 2 cups all-purpose flour
- 1 Tbsp. baking powder
- ¼ tsp. salt
- ½ cup vegan margarine, divided
- ¾ cup soymilk
- Preheat oven to 425°F.
- In a large bowl, whisk together flour, baking powder, and salt. Cut 6 tablespoons cold margarine into small pieces and using a pastry cutter or large fork, cut the margarine into the flour until you have pea-sized pieces of margarine.
- Stir the soymilk into the flour mixture, being careful not to overmix. Form the dough into a ball with your hands, but don’t knead.
- Place dough on a lightly floured surface and roll out into a sheet about ¼" thick. Use a biscuit cutter or the rim of glass to cut dough into rounds. Arrange dough rounds in an ungreased 9" round cake pan so that they are just touching. Melt the remaining 2 tablespoons margarine and brush over the tops of the biscuits. Bake 13–15 minutes until golden brown.
