Vegan Quick Biscuits

Hot, delicious biscuits in a half hour or less! Split them open while they’re warm and spread fruit jam in the middle.

  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 1⁄4 tsp. salt
  • 1⁄2 cup vegan margarine, divided
  • 3⁄4 cup soy milk


  • Preheat oven to 425°F.
  • In a large bowl, whisk together flour, baking powder, and salt. Cut 6 tablespoons cold margarine into small pieces and using a pastry cutter or large fork, cut the margarine into the flour until you have pea-sized pieces of margarine.
  • Stir the soy milk into the flour mixture, being careful not to overmix. Form the dough into a ball with your hands, but don’t knead.
  • Place dough on a lightly floured surface and roll out into a sheet about 1⁄4 inch thick. Use a biscuit cutter or the rim of glass to cut dough into rounds. Arrange dough rounds in an ungreased 9-inch round cake pan so that they are just touching. Melt the remaining 2 tablespoons margarine and brush over the tops of the biscuits. Bake 13 to 15 minutes until golden brown.
