Vegan Spiced Apple Muffins

Leaving peels on the apples to give these muffins rustic appeal. It will also provide extra nutrition and fiber!

Ingredients

  • 1 cup soymilk
  • 4 Tbsp. vegan margarine
  • Egg replacement equal to 1 egg
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • ½ cup sugar
  • 4 tsp. baking powder
  • ½ tsp. salt
  • ¾ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • 1 cup diced apples

Directions

  • Preheat oven to 425°F.
  • Whisk soymilk, margarine, egg replacement, and vanilla extract in a large bowl. In a separate bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg. Gradually combine flour mixture with wet ingredients, stirring until well mixed. Fold in apples.
  • Spoon batter into greased or paper-lined muffin tins until ⅔ full.
  • Bake for 15–18 minutes or until a toothpick comes out clean when inserted into the center of the muffins.
