Vegan Spiced Apple Muffins
Leaving peels on the apples to give these muffins rustic appeal. It will also provide extra nutrition and fiber!

Ingredients
- 1 cup soy milk
- 4 Tbsp. vegan margarine
- Egg replacement equal to 1 egg
- 1 tsp. vanilla extract
- 2 cups all-purpose flour
- 1⁄2 cup sugar
- 4 tsp. baking powder
- 1⁄2 tsp. salt
- 3⁄4 tsp. ground cinnamon
- 1⁄4 tsp. ground nutmeg
- 1 cup diced apples
Directions
- Preheat oven to 425°F.
- Whisk soy milk, margarine, egg replacement, and vanilla extract in a large bowl. In a separate bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg. Gradually combine flour mixture with wet ingredients, stirring until well mixed. Fold in apples.
- Spoon batter into greased or paper-lined muffin tins until 2⁄3 full.
- Bake for 15 to 18 minutes or until a toothpick comes out clean when inserted into the center of the muffins.
