Vegan Watercress Dip
This zippy dip goes very well with any sliced fresh veggie, chips or crackers.

- 1 bunch watercress, stems trimmed by 1 inch, roughly chopped
- 1 cup vegan soy mayonnaise
- 1⁄4 tsp. salt
- 1⁄4 tsp. ground black pepper
- In a food processor, purée watercress until very fine, about 1 minute. Add mayonnaise; pulse to combine. Season with salt and pepper.
