Vegan Yellow Cake Sugar Cookies

This is a great base for iced holiday cookies or cutouts.

Ingredients

  • 1 package (16.3 oz.) vegan yellow cake mix
  • 3 tsp. Ener-G Egg Replacer
  • 4 Tbsp. warm water
  • ¼ cup canola oil
  • ½ cup brown sugar

Directions

  • Preheat oven to 350°F.
  • Mix all ingredients well. Gather up dough and roll out on a well-floured surface. Cut with a biscuit cutter or the top edge of a drinking glass.
  • Transfer with spatula to nonstick cookie sheet. Bake for 8–10 minutes or until golden. Cool.
