Vegetable Corn Succotash

Fresh sweet corn pairs deliciously with bell pepper and crisp onion in this bursting-with-flavor side dish. Break out the skillet and you’ll have it on the table in less than 30 minutes!

  • 4 ears corn
  • 2 tablespoons butter
  • 1 red bell pepper, chopped
  • 3⁄4 cup red onion, chopped
  • 2 tablespoons fresh basil, chiffonade and divided
  • 1⁄4 cup heavy cream
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon pepper


  • Remove kernels from corn cobs. In medium skillet, combine corn kernels and butter. Cook over medium heat 8-10 minutes, until softened. Add bell pepper and onion; cook until tender.
  • Stir in cream and 1 tablespoon basil. Continue cooking 5-8 minutes, until cream has reduced.
  • Serve with fresh basil on top.
