Vegetarian Fall ABC Sandwich

What are the ABCs of a perfect sandwich? Apples, butternut squash and cheese of course!

Ingredients

  • 1 small butternut squash, peeled, seeded and cut into ¼” slices
  • 2 tablespoons olive oil
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon ground black pepper
  • 1⁄4 cup mayonnaise
  • 1 tablespoon cranberry sauce
  • 1⁄4 teaspoon minced garlic
  • 1 large apple, cored and sliced
  • 4 slices sharp cheddar cheese
  • 8 slices whole grain bread

Directions

  • Preheat oven to 425°F.
  • Toss butternut squash with oil, salt and pepper. Arrange slices in single layer on baking sheet. Bake 18 to 20 minutes, until tender and golden brown on edges.
  • Meanwhile, in small bowl, mix together mayonnaise, cranberry sauce and garlic.
  • To assemble sandwiches, spread cranberry sauce on bread slices. On 4 pieces of bread, layer butternut squash, apples and cheese; top with remaining bread slices.
