Vegetarian Fall ABC Sandwich
What are the ABCs of a perfect sandwich? Apples, butternut squash and cheese of course!

Ingredients
- 1 small butternut squash, peeled, seeded and cut into ¼” slices
- 2 tablespoons olive oil
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 1⁄4 cup mayonnaise
- 1 tablespoon cranberry sauce
- 1⁄4 teaspoon minced garlic
- 1 large apple, cored and sliced
- 4 slices sharp cheddar cheese
- 8 slices whole grain bread
Directions
- Preheat oven to 425°F.
- Toss butternut squash with oil, salt and pepper. Arrange slices in single layer on baking sheet. Bake 18 to 20 minutes, until tender and golden brown on edges.
- Meanwhile, in small bowl, mix together mayonnaise, cranberry sauce and garlic.
- To assemble sandwiches, spread cranberry sauce on bread slices. On 4 pieces of bread, layer butternut squash, apples and cheese; top with remaining bread slices.
