Vegetarian Split Pea Soup

Split pea soup is a classic favorite, but can be a completely unhealthy fat trap. Traditionally gaining a majority of its flavor from a ham bone, this recipe has been revamped and given a clean makeover with natural ingredients and home-soaked split peas, hold the hambone!

Ingredients

  • 5 cups water
  • 2 cups dried split peas
  • 1 cup celery, chopped
  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 1 cup diced Idaho potatoes
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 tsp. sea salt
  • 1 tsp. freshly ground black pepper
  • 1 cup plain nonfat yogurt

Directions

  • In a slow cooker, combine the water, peas, celery, onion, carrots, potatoes, minced garlic, bay leaves, sea salt, and pepper. Set the slow cooker to low for 8 hours.
  • Remove from heat and allow to cool slightly. Add yogurt and puree until well-blended.
