Very Cherry Jam

Some people like this jam with cinnamon, allspice, or cloves. If you want to add spices, about 1/2 teaspoon each does the trick.

  • 1 quart sour cherries, pitted and chopped
  • 1 package (3 oz.) powdered pectin
  • ¼ cup lemon juice
  • ¼ cup cherry liqueur
  • 4½ cups sugar


  • Put all ingredients except sugar in a large pan. Bring to a boil over high heat, stirring regularly. Add sugar; continue stirring until completely dissolved.
  • Continue boiling 2 minutes after sugar dissolves; ladle into hot jars, leaving ¼" headspace. Cap and process 10 minutes in hot-water bath.
