Vietnamese Beef Broth
Use to add flavor to beef or vegetable dishes. Nonalcoholic red wine can be used in place of the red wine.

- 2 garlic cloves
- 2 scallions
- 5 cups beef broth
- 1 cup red wine
- 3 slices ginger
- 3 tsp. spicy chili garlic sauce
- 4½ tsp. fish sauce
- Smash and peel the garlic and roughly chop the scallions.
- Combine all the ingredients in large saucepan and bring to a boil. Reduce heat to medium low and simmer 25 minutes.
- Strain broth and discard solids.
