This soup is a nourishing hot broth, but it can also be chilled and served as a unique dessert soup.

- 6 whole walnuts
- 4 cups water
- 2 slices ginger
- 2 Tbsp. plus 1 tsp. sugar
- In a medium saucepan over high heat, bring the walnuts and 4 cups of water to a boil. Reduce the heat to medium-low and simmer for 30 minutes.
- Add the ginger slices. Simmer for at least another 30 minutes. Stir in the sugar. Remove the walnuts. Leave in the ginger or remove as desired. Serve hot or cold.
