Warm Tomato Bean Salad

This salad can be served as a light side dish or as a delightful first course.

  • 1 Tbsp. grapeseed oil
  • 3 cloves garlic, chopped
  • 1 can (15 oz.) white cannellini beans, rinsed and drained
  • 5 plum tomatoes, chopped
  • 1 cup baby spinach


  • Heat the grapeseed oil in a skillet over medium-high heat, and sauté the garlic for 1–2 minutes, until soft.
  • Pour the beans and chopped tomatoes into the skillet. Reduce heat to medium-low and simmer for 10 minutes until the tomatoes are soft. Remove from heat and stir in spinach until wilted.
