Watercress Soup

This soup can be prepared with chicken stock or made vegetarian style.

  • 4 cups chicken stock
  • ½ tsp. salt
  • ¼ tsp. sugar
  • ½ tsp. ground white pepper
  • 1 bunch watercress, finely chopped


  • Add stock to a large saucepan and bring to a boil over high heat.
  • Add salt, sugar, and white pepper. Add watercress, and cook for another 2–3 minutes. Serve hot.
