This soup can be prepared with chicken stock or made vegetarian style.

- 4 cups chicken stock
- ½ tsp. salt
- ¼ tsp. sugar
- ½ tsp. ground white pepper
- 1 bunch watercress, finely chopped
- Add stock to a large saucepan and bring to a boil over high heat.
- Add salt, sugar, and white pepper. Add watercress, and cook for another 2–3 minutes. Serve hot.
