Ingredients
- 1⁄2 lb. tomatoes
- 4 cups watermelon chunks
- 1 medium cucumber
- 1⁄2 cup mint leaves
- 1⁄4 cup olive oil
Directions
- Combine the ingredients in any order in the work bowl of a food processor or blender.
- Pulse on and off just until blended and chunky.
- Chill 1 hour or more.
