  • ½ lb. tomatoes
  • 4 cups watermelon chunks
  • 1 medium cucumber
  • ½ cup mint leaves
  • ¼ cup olive oil

Directions

  • Combine the ingredients in any order in the work bowl of a food processor or blender.
  • Pulse on and off just until blended and chunky.
  • Chill 1 hour or more.
