Watermelon-Mint Agua Fresca
Agua fresca means "fresh water" in Spanish. It is a popular drink in Mexico made with different fresh fruits.

Ingredients
- 1⁄4 cup sugar
- 3 tsp. lime juice
- 2 cups water, divided
- 1⁄2 cup fresh mint leaves
- 4 cups seedless watermelon, cubed
Directions
- In a small saucepan, bring sugar, lime juice, 1 cup water, and mint to a boil. Stir to dissolve the sugar. Strain out the mint and discard. Allow the mixture to cool.
- Place watermelon and sugar mixture in a blender or food processor. Pulse until smooth. Pour through a strainer into a pitcher. Stir in remaining water.
