Watermelon Raspberry Granita
A granita is a bit different from a sherbet or sorbet. The fruit mixture is scraped with a fork several times while freezing so it has a beautiful crystalline structure.

Ingredients
- 4 cups chopped watermelon
- 1 cup raspberries
- 1⁄4 cup maple syrup
- 2 Tbsp. lemon juice
- 1⁄8 tsp. kosher salt
Directions
- In two batches, combine watermelon, raspberries, maple syrup, lemon juice, and salt in a blender or food processor. Blend or process until smooth.
- Pour mixture into a 9-inch square baking dish. Freeze for 3 hours, then remove from freezer and use a fork to scrape mixture into small pieces, paying special attention to the sides of the baking dish. Return to freezer and freeze for another hour.
- Scrape mixture again with a fork. Serve immediately, or spoon lightly into a bowl and freeze, covered, for up to 2 days. Scrape with a fork into serving dish and eat immediately.
