Whipped Chocolate Chip Shortbread Cookies

These buttery cookies are sure to melt in your mouth. They would make a delicious addition to your holiday cookie tray but are tasty to enjoy all year round.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 1⁄2 cups all-purpose flour
  • 1⁄2 cup powdered sugar
  • 1⁄4 tsp. salt
  • 1 1⁄2 cups semi-sweet chocolate chips

Directions

  • Preheat oven to 350°F. Prepare a cookie sheet with a silicone baking mat or parchment paper.
  • In the bowl of a stand mixer, add butter, flour, powdered sugar and salt. Beat on low speed about 1 minutes.
  • Increase speed to medium and mix for 8 minutes.
  • Fold in chocolate chips, then drop into 1 tablespoon balls. Bake 10-12 minutes, until cookies are set.
  • Allow to cool on cookie sheet, then serve.
