White Bean Soup

Smoky ham, diced carrots, and white beans make up this hearty and stew like soup. Serve with freshly ground black pepper, a drizzle of olive oil, a slice of feta cheese, and pita bread. If you like a thicker soup, purée half of the mixture in a blender.

  • 2 Tbsp. olive oil
  • ½ cup diced onions
  • ½ cup diced carrots
  • ¼ cup diced celery
  • ¼ cup diced ham
  • 1 Tbsp. tomato paste
  • 4 cups chicken broth
  • 2 cups cooked white beans
  • 1 sprig fresh thyme
  • ¼ tsp. salt
  • ⅛ tsp. ground black pepper


  • Heat oil in a large saucepan over medium-high heat. Sauté onions, carrots, and celery for 15 minutes. Add ham and tomato paste and stir to combine.
  • Add chicken broth, beans, and thyme. Bring to a boil; reduce heat to low and simmer for 25 minutes.
  • Remove thyme sprig. Season with salt and pepper.
