White Bean and Vegetable Soup

Like the black bean soup recipe, you can use canned white beans to make this recipe immediately or soak dried beans and then cook them before starting this recipe. For added fiber, you can increase the quantities of celery and onion.

  • ½ cup thinly sliced carrots
  • ½ cup diced onion
  • ¼ cup diced celery
  • 2 Tbsp. olive oil
  • 4 cups chicken broth
  • 2 cups cooked white beans
  • 1 bay leaf
  • 1 sprig fresh thyme
  • 1 tsp. salt
  • ¼ tsp. black pepper


  • Sauté the carrots, onion, and celery in the olive oil for 10 to 15 minutes.
  • Add chicken broth, beans, bay leaf, and thyme. Bring to a boil, and simmer for 25 minutes. Stir and season the soup with salt and pepper. Serve hot.
