White Chocolate Coating

  • 10 oz. white chocolate, finely chopped
  • ¼ cup heavy cream, at room temperature
  • 4 Tbsp. butter, softened
  • 1 Tbsp. light corn syrup


  • Melt the white chocolate, cream, butter, and corn syrup in the top of a double boiler over hot, not simmering, water, stirring constantly. Set aside to cool to room temperature.
