Whole Grain Wraps
These wraps are delicious and nutritious!

- 1 cup all-purpose flour
- ½ cup whole wheat flour
- ¼ cup rolled oats (not quick cooking)
- 2 Tbsp. brown rice flour
- 2 Tbsp. cornmeal
- 1 tsp. kosher salt
- 1 tsp. baking powder
- 1 Tbsp. lard
- ¾ cup cold water
- In a large bowl, combine all-purpose flour, whole wheat flour, oats, rice flour, cornmeal, salt, and baking powder. Cut in lard to a crumb consistency. Add enough water to hold dough together. Knead until smooth, about 2–3 minutes, then rest 5 minutes.
- Turn dough out onto a floured work surface, divide and roll into 5 balls. With floured fingers, flatten into a thin disk. Using a rolling pin, roll into a thin sheet, no more than ¼" thick. If the dough becomes elastic and springs out of shape, rest for 5 minutes, then roll again.
- Preheat a dry griddle over medium heat. Cook until lightly golden about 1–2 minutes per side.
